Who doesn’t like kebabs? Aren’t they already a part of the global diet? And while you can always get a lip-smacking kebab, now is a special occasion to try it out, the holy month of Ramadan. We have come up with a paper kebab recipe for you, which you can eat for Iftar.
Ingredients for making paper kebabs:
2 tablespoons ginger paste
2 tablespoons garlic paste
2 tablespoons cayenne powder
2 cups yogurt
1 cup double cream
3 lemon juice
10 chicken drumsticks
3 tablespoons oil
2 tablespoons ghee or butter
100 g hot spices
2 eggs
A bunch of coriander
10 green chillies
1 kg potatoes
100 g onion
1 tablespoon food coloring
1 tablespoon yellow food coloring
1 bunch of mint
4 spring onions
2 tablespoons pine nuts

Grate half a kilo of chicken
Method:
Clean the chicken in the drumstick and make a hollow.
Marinate the drumsticks with garam masala, 2 eggs and chilli for 10 minutes.
In a pan, saut some ginger and spring onion.
In the same pan add the minced chicken and pine nuts.
Then add ginger paste, garlic paste, cayenne powder, yogurt, cream and lemon juice to marinate the tikka. Marinate the stuffed drumsticks with the same marinade.
Make a sauce with mint, chilli and garlic.
Boil the potatoes, add salt and then mash.
Plating:
Place some mashed potatoes in the center of the plate. In a circular shape.
Garnish with desi ghee.
Then set 2 or 3 drumsticks in each plate with sauce.
Serve it with salad on a plate.
This recipe only takes 60 minutes to prepare. And it’s also an excellent starter snack for dinner parties.
